Heard you last week on the Faith Middleton Show, can’t wait to get your book. You talked about cider brined pork chops with mustard pan sauce, wanted to know if I could make the brine low salt, as I cook for someone with high blood pressure.

There isn’t really a way to do a low-salt brine, but you can simply skip that step and proceed with the recipe as usual. To boost the apple flavor, peel and slice a firm-sweet apple, such as Golden Delicious, cook it in a little bit of butter, and serve it with the chops. Here’s the link for the recipe:
